So fast and easy to whip up, plus a great balance of sweet and savoury - the perfect contribution to an appetizer table for any occasion💞Pink peppercorns are the star ingredient here, giving such a special, floral and fruity vibe to the whipped feta. They are mildly peppery but much less pungent than black or white pepper, because pink peppercorns are not true peppercorns at all, but the dried berries of the Peruvian pepper tree! My friends, I am so excited to return to where it all began: My New Roots!🥳 I’ve been pouring all of my time, energy, and love into Grow, my membership site, and my retreat business @goldencircleretreats for the past couple of years, and although I’ll enthusiastically continue those projects, I’m also looking forward to blogging again🤗What started in 2007 as a fun way for me to share recipes and learnings from my holistic nutrition education, blossomed into a multifaceted career of dreams! I certainly never anticipated running a business - let alone several simultaneously - and although it’s endlessly challenging, it’s also a delight to figure it all out. I am so grateful for your love and support throughout!💗The My New Roots blog was the original place to share my greatest inspirations and insights on health and wellbeing, while gleefully obsessing over ingredients, flavours, and cooking techniques to best support our bodies’ needs and vitality. And although I took a little time to focus on other aspects of my work, nothing has changed! I still see the blogging space as one of celebration, education, and fun, because I am a forever-learner and nothing gets me as excited as playing in the kitchen, and then sharing my discoveries with you😎So, here’s a little sneak peek of what’s to come next week: the chunkiest, most delicious granola EVER! If you need a break from cookies, whip up these rich and fudge-y brownies that are grain-free, gluten-free, vegan, fibre-rich, and don’t even need an oven!😎The recipe is tested and perfected (such a tough job), and now live on Grow, my membership site. Never waste another hunk of feta cheese again! No more feta-lities!!😂Use this super simple kitchen hack to keep your feta fresh for up to 3 weeks. You’ll need:1 cup / 250ml of filtered water2 teaspoons of fine sea saltStir together until the salt has dissolved.Pour this brine into a glass container.Add your leftover hunk of feta, and make sure that it is fully submerged in the brine (if not, simply make another batch of brine with the same ratios until you have enough). Snap on an airtight lid, and place in the fridge. For ultimate freshness, check the feta every week, and if it’s starting to get a bit slimy or smell *too* tangy, drain the brine and replace it with a fresh batch. I hope this helps you waste less feta! Cheese is precious!
